Lemon Chicken

Three chicken breasts pounded thin
2 Tbsp butter
3 Cloves of garlic
3 lemons

Lightly flour chicken breasts and place in the pan with butter and garlic on medium heat. Add lemon juice. Cook 3 minutes and turn chicken over until cooked through. This dish takes ten minutes to make and tastes great! Add salt and pepper to taste.

Tomato Basil Soup with Garlic

2 lbs roma tomatos
3 tbsp of garlic
2 tsp thyme (dried is fine)
1 tsp rosemary (dried is fine)
8 cups of chicken broth
Fresh Basil chopped

Slice the tomatos in half longways and top them with salt, pepper and olive oil
Place in oven at 400 degrees and cook until roasted
Let cool then food proccess the tomatos until almost smooth( some chunks are okay)

In a seperate pan, sautee garlic in olive oil. Add thyme, rosemary, salt and pepper. Add chicken broth. Then transfer the tomatos to the broth. Bring to a boil, then simmer. Lastly add fresh basil to taste!

Holiday Pomegranate Martini

Pomegranates are natural antioxidents. Although no martini is healthy, this one is as healthy as it can get and tastes great!

1 1/2 cups of pomegranate juice
2 oz citron vodka
1 oz cointreau liquor

Shake with ice and serve.

Ground Turkey Chili

1 package of ground turkey
green peppers
jalepeno pepper
red bell peppers
1-2 tbsp chili powder
1 tsp salt
1/2 tsp cumin
dash of cayan pepper
1 can of crushed tomatos

In a sautee pan brown the turkey, dice peppers and onions and add to the pan, add all the seasonings and crushed tomatos. Cook for about an hour on medium heat. Add additional seasoning to taste.

Really easy to make throw everything together and let it cook!

Microwave Salmon!

A lot of us don't have any time to make a good dinner and if we find the time it's hard to cook healthy for one. If you like salmon try this:
Buy a piece of salmon from the store
Marinate it in the fridge as you would chicken (use lemon pepper, balsamic vinegar, etc)
When you're ready for dinner put your microwave on 50% power, cover the salmon, and microwave for just between 2-4 minutes. And you're done! It takes less time and is healthier than a microwavable dinner.

If you're looking for a side, microwave some veggies. Take any fresh veggies, put them in a bowl with a little water, salt and pepper. Add garlic and butter on top if you'd like, cover, and microwave until cooked.

First healthy cooking tip-Chicken Parm

Buy bonless skinless chicken breast
Sear the chicken in olive oil and garlic (both sides)
Place it in an oven safe dish
Sprinkle with breadcrumbs
Top with a little olive oil
Add sauce
Add 2% mozzerela cheese
Bake on 350 for 20 minutes

It will taste just as good as the heavily breaded and fried chicken parm your used to but it's so much better for you!!!

Who am I and what is this about?

My name is Meredith Bratus and I am a senior at University of Delaware. This blog is being created for an information technology class. Cooking is something I am passionate about and over the past year have become more innovative in my own preparation techniques to reduce the amout of calories in great meals. I will be providing different ideas of how to cut calories and fat to make a heathier meal. Hopefully, others will add some input or suggestions.
